For those who like to snack (so, everyone). Add chocolate chips or your favourite shredded fruit and veggies to the WTF Oat Muffin Mix for tasty morsels to slip into lunch boxes, hiking backpacks, and boring meetings. Did we say boring? We meant morning, morning meetings.
Each bag makes 12 full-sized muffins, but you could always opt for a batch of 24 mini-muffins.
If you only use a portion of the bag, store it in a cool, dry place until your next muffin run. Mix together 1 ¼ cup of milk, ⅓ cup of oil and an egg (or your preferred vegan alternatives - one mashed banana works well in this recipe as a replacement for the egg). Stir in 1 packet of WTF Muffin Mix, and add in any additions like chocolate chips (¾ cup), grated apple or carrot (1 cup), or chopped walnuts (½ cup).
Scoop the batter into a lined or greased muffin tray and bake at 350°C for 25-30 minutes; until the tops are golden brown and bounce back when you give them a friendly poke.
