Colourful, crunchy and seasonal, our winter salad features roasted yams, sweet mandarin oranges, and a delicious Vegano mandarin vinaigrette.
Remove Vegano Roasted Yams, Vegano Winter Salad, Vegano Mandarin Vinaigrette, Vegano Power Seed Granola, and mandarin oranges from the bag to prepare for cooking.
Preheat the oven to 400˚F.
Place the Vegano Roast Yams on a lined baking sheet. Season with salt, pepper and olive oil.
Place the Vegano Roast Yams in the oven and bake for 10-15 minutes or until heated through.
In a large bowl, add the Vegano Winter Salad Mix and toss with the Vegano Mandarin Vinaigrette, salt and pepper.
Peel the mandarin oranges and separate the orange segments into pieces.
Once the Vegano Roast Yams are fully heated, remove from the oven and slice them in half.
Plate the Vegano Winter Salad Mix in two large bowls, adding the Vegano Roasted Yams on top. Garnish with Vegano Power Seed Granola, salt and pepper.
