Spiced jackfruit, black eyed peas, and a fresh Caribbean coleslaw make this dish both hearty and fresh!
Remove Vegano Jerk Jackfruit, Vegano Caribbean Coleslaw, black eyed peas, brown rice, and fresh parsley from the bag to prepare for cooking.
Add brown rice to a small pot with 1.5 cups of water and a pinch of salt. Bring to a boil then cover and simmer for 15 minutes or until all the water had absorbed into the rice.
In a large pan cook the Vegano Jerk Jackfruit and the black eyed peas on medium heat for 5-7 minutes until everything is heated through and fragrant. NOTE: we do not add salt, season to your liking.
Add the Vegano Coleslaw to a small bowl and add lime juice, olive oil, salt and pepper. Mix well.
Finely chop parsley and set aside for plating.
In two bowls serve the Vegano Jerk Jackfruit and the black eyed peas alongside the brown rice. Add the Vegano Coleslaw to the bowl and top with fresh parsley.
