This meatless French vegan Cassoulet is extra delicious with beans, tofu, herbs, mushrooms and more veggies.
Remove Vegano White Bean Cassoulet, Vegano Marinated Tofu Roast, roasted red onion, king oyster mushroom and Parsley from the bag to prepare for cooking.
Preheat the oven to 400˚F
Slice king oyster mushrooms into large pieces. Cut Vegano Marinated Tofu Roast into large slices.
In a large oven safe pan over medium heat sear Vegano Marinated Tofu Roast, king oyster mushrooms, and roasted red onion with 2 tbsp of olive oil for 3-5 minutes. Season with salt and pepper.
Transfer the seared Vegano Marinated Tofu Roast, king oyster mushrooms, and roasted red onion to the oven to finish cooking. Bake for 10-15 minutes until everything is heated through.
In a small saucepan over medium heat, add the Vegano Cassoulet Beans and cook for 3-5 minutes or until heated through. Season with salt and pepper.
Finely chop the parsley and set aside for plating.
On the middle of two plates, add the Vegano White Bean Cassoulet. Top with Vegano Marinated Tofu Roast, king oyster mushrooms, and roasted red onion. Garnish with chopped parsley.
