These refreshing tacos are wrapped in corn tortillas filled with grilled corn and sweet potato, cherry tomatoes, lime juice, and a scoop of delicious guacamole.
Remove Vegano Summer Veg Mix, Vegano Chipotle Bean Dip, Vegano Guacamole, corn tortilla, red cabbage, cilantro, and lime from the bag to prepare for cooking.
Remove the stem and dice cilantro into fine pieces and set aside for plating.
Preheat a large pan on medium heat, add two tablespoons of oil (vegetable/olive) and saute the Vegano Summer Veg Mix and cook for 5-8 minutes or until everything is heated through. Season with salt and pepper to taste. Once cooked, remove from the pan and set aside.
Place each tortilla in the pan for a few seconds and flip. Remove the hot tortillas and place them on a plate.
Spread the Vegano Chipotle Bean Dip evenly across the tortillas. Add some of the sauteed Vegano Summer Veg Mix and top with Vegano Guacamole. Garnish with red cabbage and cilantro and lime.
