In a medium sized pot, heat 2 inches of oil (vegetable) on high heat. If you have a thermometer 350F is what you’re aiming for.
Form Vegano Falafel Mix into balls or patties no bigger than a golf ball.
Slice cucumber and baby tomatoes into small pieces and set aside for plating
When the oil is hot, carefully lower Falafels into the pot and fry for +/- 4 minutes. Each Falafel should have a brown crust when done.
Remove Falafel with a straining spoon and place on a paper towel lined plate to absorb excess oil and cool.
On a small plate, heat pita bread for 10-15 seconds in the microwave.
Thinly spread pita with hummus to prepare for plating
Top the pita with the greens mix, tomatoes, cucumbers, olives, falafel, and pickled onion. Drizzle the tahini dill sauce on top.
