Preheat the oven to 400º F.
Fill an oven safe, medium-large pot halfway with water. Add a pinch of salt, cover pot and heat on high until water comes to a boil.
Once water is boiling, add the macaroni noodles. Cook for 7 minutes.
Once cooked, strain macaroni in the pot by using the lid to drain out excess water.
Add Caramelized Onions, Vegano Bechamel Sauce, and ¾ of vegan parmesan to the pot of strained macaroni noodles.
Using a spoon, press down on the pot of mac and cheese to make a flat surface. Top with Vegano Gremolata and the rest of the vegan parmesan cheese. Place the pot in the oven and bake for 20 minutes. (If you don’t have an oven safe pot, transfer mac and cheese to a small baking dish).
Finely chop parsley and set aside for plating.
Remove French Onion Mac and Cheese from the oven and divide it between two large plates. Top with fresh parsley.
